Chef's Note

Made with a red Burgundy or Bordeaux, or even a red wine from Alsace, this famous mulled wine is part of local Christmas tradition. There is always a mulled wine seller present as people stroll through the Christmas markets to warm the bodies and spirits of the shoppers.

More typical of Alsace, though less widespread, is "Kandelzucker," Alsatian white wine combined with honey.


Ingredients

For 1 liter mulled wine

- 1 liter (4 cups) red wine
- 250 g (8 oz.) sugar cubes
- 1 cinnamon stick
- 2 star anise
- 2 cloves
- a pinch of nutmeg
- zest of half a lemon
- zest of half an orange


Method
  1. Place all the ingredients into a saucepan.
  2. Bring to a boil, reduce the heat and simmer 3-5 minutes.
  3. Serve hot in glasses, decorated with lemon or orange slices.

Method
  1. Place all the ingredients into a saucepan; heat over low heat, but do not boil - otherwise the alcohol will evaporate.

- 125 ml (1/2 cup) strong coffee
- 30 g (1 oz.) bitter chocolate
- 1/2 vanilla bean or a drop of vanilla extract

Method
  1. Gently heat the milk over moderate heat with the vanilla bean and sugar, without letting it boil; once it is hot, reduce the heat to minimum and infuse for 10 minutes; scrape the seeds from the vanilla bean;
  2. pour the hot coffee and grated chocolate into the hot milk; increase the heat to medium until the chocolate is melted; whisk until foamy;
  3. pour into glasses; garnish with whipped cream and serve immediately. You can serve it with a cinnamon stick to stir the cream into the mocha.

- 200 ml (3/4 cup) sugar
- 100 g (3 1/2 oz.) blanched almonds
- 100 g (3 1/2 oz.) raisins
- 200 ml (3/4 cup) vodka (optional)


Method
  1. Pour the red wine into a saucepan; add the cloves, cinnamon and sugar;
  2. heat the mixture and leave on the heat for 10 minutes without letting it boil;
  3. add the liquor; strain and serve very hot with a few almonds and raisins.

"The high point of Christmas in Sweden is the year's biggest buffet - a smörgåsbord of traditional delicacies, both hot and cold, given an extra festive flair for Christmas Eve," Robert explains from his restaurant in the heart of Stockholm's Old Town.

"In my opinion, nothing is more typical than Glögg, a potent mulled wine flavored with sugar and spices that is served with gingerbread in the days leading up to Christmas, evoking all the warmth and scents of Christmases past.

"It is best drunk hot, and usually served only during Christmas holidays with peeled (or simply chopped) almonds and raisins.

"The Glögg will be even spicier and more flavorful if you bottle it and leave it for a week. You can also leave out the vodka if you want something with less alcohol."


Ingredients


- 1 bottle of red table wine
- 50 ml - 100 ml (1/4 - 1/2 cup) vodka (optional)
- 5-20 cloves
- 1 rounded tsp. cardamom seeds
- 2 to 4 cinnamon sticks
- 1 or 2 pieces of ginger
- Zest of half a lemon
- 125 to 250 ml (1/2 to 1 cup) sugar
- 1 rounded tsp. vanilla sugar


Method
  1. Crush the cinnamon and cardamom. Peel the lemon. Put all the spices and peel into a glass jar with the vodka.
  2. Cover. Leave overnight. Strain the vodka, discard the spices.
  3. Mix the spiced vodka with the wine and sugar.
  4. Heat all the ingredients in a large saucepan until steaming hot. Do not boil! Stir and taste.
  5. If not sweet enough, add more sugar. If too sweet, add more wine.

  2. separate the orange into segments; place half the orange into a saucepan with all the other ingredients; heat gently without boiling;
