Ingredients:
Chicken thigh 800 grams (1.76 lb.) Sake, Japanese rice wine 3 Tbsp. Potato starch flour (katakuriko) as needed Salad oil as needed Lemon as needed Lettuce as neede

Marinade:
Soy sauce 4 Tbsp. Garlic (coarsely grated) 2 tsp. Sake 2 Tbsp. Mirin (a kind of sweet sake seasoning) 1 Tbsp. Japanese yellow mustard (nerigarashi)* 1 Tbsp. Powdered pepper as needed Salt as needed Ginger (coarsely grated) 2 Tbsp.

Directions:
1. Cut the chicken into appropriate sizes. Set chicken in a bowl, and sprinkle with 3 Tbsp. sake.

2. Mix the grated garlic and ginger with mustard and add the mixture to the chicken, then add salt and pepper to taste as needed.

3. Pour in the 2 Tbsp. sake and mirin, and marinate for about 30 minutes.

4. Coat each piece of chicken with starch and fry in oil at medium heat.

|
|
5. Lay the lettuce on some plates, and arrange the chicken atop. Add lemon slices to garnish.

What is Nerigarashi?
Nerigarashi, or Japanese yellow mustard is usually sold in the tube. It has a sharp flavor and doughy consistency, much like wasabi, but made from the Chinese mustard plant.
