Lightly fried Sardine with sweet soy dressing
Ingredients
- 2 Sardines
- Half an Onion
- Half a Carrot
- Half a Green pepper
- 2 tbs of Corn flour
- 4tbs of vinegar
- 4tbs of soy sauce
- 3tbs of sugar
- 1tsp of dashi
Method
- Cut the vegetables into long very thin slices.
- Take off the sardine heads, tail and fin. wash the inside stomach using salt water.
- Put the vegetables, soy sauce, vinegar, sugar and dashi in to the pan and boil for 2 minutes.
- Coat the sardine’s with corn flour and deep fry at 170c for about 7minutes.
- Mix the vegetables and sardines and leave to stand for about 10minutes. Alternatively you could keep them in the fridge overnight and eat as a cold dish.
