Sweet Fried Sardines

Lightly fried Sardine with sweet soy dressing

Ingredients

  • 2 Sardines
  • Half an Onion
  • Half a Carrot
  • Half a Green pepper
  • 2 tbs of Corn flour
  • 4tbs of vinegar
  • 4tbs of soy sauce
  • 3tbs of sugar
  • 1tsp of dashi

Method

  1. Cut the vegetables into long very thin slices.
  2. Take off the sardine heads, tail and fin. wash the inside stomach using salt water.
  3. Put the vegetables, soy sauce, vinegar, sugar and dashi in to the pan and boil for 2 minutes.
  4. Coat the sardine’s with corn flour and deep fry at 170c for about 7minutes.
  5. Mix the vegetables and sardines and leave to stand for about 10minutes. Alternatively you could keep them in the fridge overnight and eat as a cold dish.
